
Those who come to the midweek meetings often partake of Annie's 'one-stage cheese loaf'. By popular request here is the recipe:
3oz. margarine
8oz. self-raising flour
1 level teaspoon baking powder
1 level teaspoon dried mustard
Half level teaspoon salt
Quarter level teaspoon pepper
4 rashers of bacon, rind removed and chopped
1 egg, standard
3 oz. Cheddar cheese, grated
8 tablespoons milk (Quarter pint)
Place all the ingredients in a mixing bowl and beat together with a wooden spoon until well mixed (2-3 minutes). Place the mixture in a deep 1-lb. loaf tin, previously bottom-lined with greaseproof paper and brushed with melted margarine (I use silicone paper as it does not stick). Smooth over the top. Bake on the middle shelf of a preheated moderately hot oven (Gas no. 5: 380 F.) for 40-45 minutes. Remove from the oven, leave in the tin for 5 minutes, before turning out. When cold, slice and spread with butter.
